The Vintage Range

The Auld Alliance Vintage collection

A collection of rare casks selected for their exceptional character and finished for some in old wine casks from the Auld Alliance country and beyond. At the time, not only did Scotland export it’s whisky to France but it also imported wine casks for drinking, which were then used for storing the whisky.

A little bit of history: The Auld Alliance from the old Scots spelling Ald Allyance or in Scottish Gaelic, An Seann-Chaidreachas), was an alliance sealed between the Kingdoms of France and Scotland. Even if the treaty of Edinburgh from 1560 was meant to cancel most of its features, the spirit of the treaty continued as Mary Queen of Scots refused to ratify the treaty and after that non written support remained in place. The historic ties that link Scotland to France, and the rest of Europe, have been in place since 1295 and will continue to mark the culture and future of this nation.

The House of McCallum Vintage collection represents casks from different regions, different styles, some unique casks and other from distilleries distilled the same day and from the same pot still. Each bottle from each cask is unique. Some are finished is selected craft wine casks from small wine producers and are handpicked by myself.

Dailuaine: 13 YO - 2009 - Bio Pomerol Cask Finish - 46.5%

Nose: Toffee apples, marshmallow, Strawberry jam

Palate: Fruit gums, citrus peel, honey

Finish: Grassy, woody, orange peel


Mannochmore: 13 YO - 2009 - Graves Cask Finish - 51.5%

Nose: Meaty, chocolate coated toffee, bramble jam

Palate: Ginger tablet, plums

Finish: Strawberry jam sponge, vanilla


Linkwood: 15 YO - 2007 - Ruby Port Cask Finish - 50.5%

Nose: Leathery, beeswax, bitter orange

Palate: Rich, peppery, meaty, eucalyptus

Finish: Fresh, citrus peel, mountain honey


Glen Elgin 10 YO – 2013 – Bourbon & bio St Emilion – 50.5%:

Nose: Rich madeira cake, figs, pineapple, honey

Body: Beautiful balance of floral notes and summer fruit. Melon, plums and peaches

Finish: Elegant, with grapefruit, passion fruit and orange peel


Glen Moray 16 YO – 2007 – Oloroso Sherry & Corton Renardes – 47.8%:

Nose: Brandy, rich chocolate toffee, gingerbread, treacle

Body: Rich, intense, with a soft centre of toffee, fruitcake and cedar wood

Finish: Soft, minty and mandarin peel


Glenburgie: 11 YO – 2008 – Peated cask finish (6 x 70cl x 46.5%)

Linkwood: 13 YO – 2006 – Cotes de Nuit Cask Finish (6 x 70cl x 46.5%)

Highland:

Teaninich 2014 – Cask Strength 11 ans – 58.1% - Bourbon First Fill cask –Built in 1819 by Hugh Munro and his brother, wealthy landlords in the north of Scotland. A distillery that is used as a Northern Highland base for many a blend due to it’s rich and complex flavour profile. In 1933 the distillery is sold to DCL, and increases in 1970 from 4 to 6 pot stills. In 2014 a new distillery is built with 6 new Pot Stills.Nose : Partridge, grapefuit, vanillaBody : Honey, gingerbread, spring flowers, amandesFinish : Sweet, soft and citrus fruit

Islay:

Caol Ila 2015 – 10 ans – 48.5% - Rum Cask – The largest of the Islay distilleries on the west coast facing Isle of Jura. Caol Ila meaning the Sound of Islay, produces an elegant peated malt. Built in 1846 by Hector Henderson, the distillery changed ownership twice up to 1920 , when it’s owner, a Glasgow blender named Bulloch went bankrupt. Caol Ila re-opened after the second world war and was rebuilt in 1972. Distillation restarted in 1974. Nose : Barbecue, peat chimney, mineral, salty and mango. Body : Lovely ash peat smokiness, lemon zest, honey and spices and freshness.Finish : Soft, sweet, spices, smokiness of peat and wood charring
